Our book of recipes

These are our recipes. Of course, we could keep them to ourselves, but we believe they can only get better by sharing them with guests and colleagues at other restaurants. Feel free to try them out, and especially let us know what it results in. That way, we hope to learn from each other. We often still polish them here and there, so they are subject to change.

Many of our recipes are based on wild plants. Be sure to read up before you pick to make sure you are picking the right thing. We use the book Eetbare wilde planten (available at your local bookstore) and Wildpluk Wiki. If you're not sure what something is, don't pick it.
