Goudse moppen

230 gr cane sugar
400 gr soft butter
2 egg yolk
6 gr salt
500 gr flour t55
3 gr of spice
Goudse moppen are classic Dutch cookies. The Goudse mop is a round cookie known abroad as Gâteau sec de Gouda. Moppen refers to the round shape of the cookies.


  • mix everything by hand except the flour 
  • then mix the flour in 
  • make 8 rolls of 20 cm (same weight)
  • roll them in a mixture of fine cane sugar and spice 
  • let them firm in the cold fridge overnight 
  • bake them 16 min 170c
